Ingredients:
- 1 lbs of ground pork
- 1/2 lbs of shrimp - roughly chopped
- 2 lbs of tomatoes - cut into wedges
- 1 jar of crab paste
- 2 eggs
- 1 bunch of green scallions
- 1 pack of rice vermicelli
- 1 pack of fried tofu cubes - I didn't have them at the time
- Herbs, bean spouts, fried onions for garnishing
- Drain the oil in the crab paste for later use
- Combine the shrimp, ground pork, crab paste and 2 eggs together
- Mix well and refrigerate for 30 minutes
- Finely chop the green parts of the scallions and cilantro for garnishing
- I use the Breville multi cooker to make this soup. It's hands down the best thing I've ever bought for my kitchen. I hardly use my stove top anymore
- Use the inside pot of the multi cooker, add the oil from the crab paste
- Add the tomatoes and saute until they begin to burst
- Fill the pot up with water (6 quarts)
- Bring it to a boil
- Spoon the mixture into the pot (one large scoop at a time)
- Add the scallion whites to the pot
- Select Pressure option and set it for 8 minutes
- Let the pressure release on its own
- Open the pot and add fried tofu cubes while the broth is still boiling
- Add fish sauce, onion powder and black pepper to taste.
- Cook noodles according to directions
- Add cooked noodles to a serving bowl
- Ladle over the soup with the meat/shrimp/egg mixture, tomatoes and tofu cubes
- Add herbs, bean sprouts, fried onions, shrimp paste if desired
- I love how all the flavors blend so well together even though it takes no time in the pressure cooker. The mixture of ground pork and shrimp is so yummy and almost melt in your mouth.
