Vietnamese Mung Bean Cakes for Lunar New Year

I just finished making these delicious Vietnamese mung bean cakes yesterday. I know Lunar New Year is still 2 weeks away but we won't be home for the next 2 weekends so I am planning ahead of time. These cakes has certainly been a labor of love. Took me 2 days from start to finish. I marinated everything overnight then woke up at 4:00 a.m. the next morning to put everything together. Vietnamese Dried Pickles for Lunar New Year

Happy Sunday, everyone! Lunar New Year (Tết) is 3 weeks away so I thought today, I'd share a super easy yet delicious pickles recipe. These crunchy pickles are served along-side Vietnamese Mung Bean cakes (which I shared last year). I am making them again next week. My Mom usually makes this but sadly, I am not seeing my parents this year due to COVID so I am trying my hands at making it. They turned out incredible! You can sun drying the vegetables. It's not doable for me since it's currently 16 degrees outside =) You can also use a dehydrator to speed up the process but it's not necessary. You can make crunchy and savory pickles without any fancy kitchen gadgets. It's easy to make and keeps well refrigerated.

Amazing boots under $35

As you might have noticed, I rarely push sales. Blogging is my hobby. I don't make a living off of this blog. However, I think you should go buy these boots I am showing you today =). They are both incredibly and under $35. First up is this pair of lace up combat boots. I purchased them last December and I cannot stop wearing them. I rarely leave the house these days but when I do, I always grab these boots. As you can tell in these photos. Both pairs are dirty because they have been worn. They fit comfortably right out of the box. They look way more expensive than $35. They are made of faux leather but have a more realistic look and feel of real leather. Love the side zipper for easy on/off. Run very true to size. I took my usual size 7. Available in 3 classic colors (black, brown and taupe)

Next up is this pair of hiking boots. I got them last November (mentioned in this post). Again, they're dirty because I've been wearing them so much.  I've walked miles in these boots and was pleasantly surprised with their comfort level. They run true to size as well. I took my usual size 7. These boots have great support, functional and fashionable. Can you guess how much they cost? They're $19!!! Available in black and tan (the tan is so gorgeous as well). Please do yourself a favor and go get these boots. You can thank me later =)

Matching sets under $50

For the past 10 months, I traded my professional attire for comfy pieces. Since I will be working from home for another 6 months (could be longer), I thought I would add a few more sets to my rotation. I remember at the beginning of the lockdown, comfy matching sets were so expensive. I couldn't' find a set that was less than $100. Now, you can find plenty of affordable two-piece outfit sets. What I got for Christmas 2020

Hope everyone had wonderful holidays. Yesterday was my first day back to work (a.k.a my closet) after a 2-week break. Let me tell you, it was rough. Everyone in my team sounded so sleepy on the 9:00 a.m. call =)  Today, I am here to share my annual "What I got for Christmas" post. I love watching this type of video on YouTube. Sometimes, these videos give me some really good gift ideas for next Christmas. Despite unexpected challenges in 2020, we pushed through obstacles and achieved our goals together as a family. A month before Christmas, my husband asked what I would like for Christmas and to be honest, I literally had no idea. It's been a strange year. We are not going to anywhere nor seeing anyone so all my designer items are collecting dust in my closet. There is no reason for me to acquire more so I asked for comfy stuff and a few things for the house. Starting off with what my husband got me for Christmas.

1. Breville Smart Oven Air Fryer: I am a fan of the brand. He got me this multi-cooker years ago for Mother's Day. I accidently destroyed it. He went out and got me another one because he knows how much I use it. For Christmas, he got me this Breville smart oven & air fryer combination. Sadly, the estimated delivery date is April 1st. Never thought I have to wait 4 months for an oven =) We don't eat fried foods regularly but if you have a list of delicious and healthy air fryer recipes, I would love to know.
